Craveable Carrot Muffins: Date Added: 24 Jul 2013

Ingredients

1/2 cup - Coconut flour
1/2 teaspoon - Celtic sea salt (optional)
1/2 teaspoon -Baking soda
2 teaspoons - Ground cinnamon
6 - Eggs (or 1 1/2 cups liquid egg substitute)
1/2 cup - Unsweetened applesauce
1/2 cup - Agave syrup
2 tablespoons - Vanilla extract
1 teaspoon - Apple cider vinegar
2 cups - Carrots, finely grated
1/2 cup - Currants
4 teaspoons - Ground flax seed
1/2 cup - Walnuts (if desired)

Cooking Instructions

Preheat oven to 350° F.

In a medium bowl, combine coconut flour, salt (if using), baking soda and cinnamon.

In a large bowl, beat the eggs, then blend in the applesauce, agave syrup, vanilla, and apple cider vinegar.

Add the dry ingredients to the wet ingredients and mix thoroughly. Fold in the carrots and currants.

Mist a standard size 12-muffin tin with olive oil. Divide the batter evenly between the 12 cups, filling each cup about 3/4 full. Sprinkle each muffin with 1/4 teaspoon ground flax seed.

Bake 24-26 minutes, until tops of muffins spring back when lightly pressed. Cool and serve.
