18th Century Baked Apple Pudding: Submitted by: Jas. Townsends and Son | Date Added: 7 Sep 2017

2 large apples peeled and cored (flesh)
2 lemon’s shredded rind
1 cup sugar
8 ounces butter
6 eggs

Cooking Instructions

1. Boil the lemon’s rind, changing the water twice. Just to boil (simmer).
2. Boil the apples about 25 minutes to get really soft and pour off the water.
3. Combine the apples and butter. Mash and mix together.
4. Wisk the whole eggs then combine sugar and lemon rind.
5. Mix the apple mixture into the egg mixture. Pour into a standard short paste pie crust.
6. Bake at 350 for about 45 minutes, until the top is a light golden brown.
