Kale and Currant Salad with Lemon Miso Dressing : Submitted by: epicurious | Date Added: 8 Aug 2013

1 bunch organic kale, stalks removed and chopped
2 organic carrots, grated or julienned
1/2 cup organic dried currants

Cooking Instructions

all vegetables should be bright in color and slightly tender after boiling
Boil kale stalks for 10 seconds
Boil kale leaves for 5–10 seconds
Boil carrots for 3–4 minutes
Let vegetables cool aside together in bowl
Sprinkle with currants and stalk
Serve with Lemon Miso Dressing -- see Lemon Miso Dressing
