Salad:

6 oz. fresh spinach
1 (11 oz.) can mandarin oranges, drained
1-2 small red onions, sliced
1 1/4 cup goat cheese, crumbled
1 cup dried cranberries
1 cup almonds, lightly toasted
Dressing:

1/2 lemon, juiced
1 orange, juiced
1/2 lime, juiced
3/4 cup extra-virgin olive oil
3 tablespoons champagne vinegar
1 tablespoon honey
salt and freshly ground pepper, to taste

Cooking Instructions:

1. In a large bowl, toss together the spinach, oranges, onions, dried cranberries and almonds. Set aside. The juices from the oranges will release and help flavor the salad.

2. In a separate bowl, start with the citrus juices and pour in the olive oil, then add in the champagne vinegar and honey. Make sure to mix well so that the dressing is well combined. Season with salt and pepper and adjust accordingly.

3. Pour some of dressing over salad, reserving the rest of it for people to dress their own, and toss well. Add goat cheese crumbles and refrigerate for 20 minutes or serve immediately.
